Quinoa & Black Bean Sliders


Oh doesn't love a good burger?! The juicy quinoa black patty combined with green goddess dressing & pickled veggies has such a unique pop of fresh flavors! Unlike traditional black bean burgers, there is more quinoa in this version and a lot more spices. These sliders would be a perfect as an appetizer or full meal!

Recipe: Makes 8 sliders

Ingredients:

Quinoa and Black Bean Patty:

3/4 Onion finely diced

3 Garlic cloves finely diced

1 Jalapeños finely diced

1 can of Black Beans

1 1/2 cups cooked Quinoa

1 cup Rolled Oats

1 tsp Cumin Powder

3/4 tsp Garlic Powder

1/4 tsp Cayenne Pepper

1/4 tsp dry Oregano


Pickled Jalapeños & Onions:

1 Onion sliced long

2 Jalapeños cut round

2 cups Water

1/2 cup Vinegar

2 tsp Salt

1/2 tsp Sugar

Method:

1. Combine the onion, garlic, jalapeños, quinoa and spices together. Add in the can of black beans with a little bit of liquid from the black bean can (approx. 1 tsp of the liquid).

2. In your food processor grid up the rolled oats until they are like a flour.

3. Mix in the oats with the quinoa and black bean mixture. Form the the patties with your hands and leave them in the fridge to set for at least 30 minutes.

4. Meanwhile in a pot put water, vinegar, salt and sugar together. Bring the pickling liquid to a boil.

5. Pour the boiling pickling liquid over the onions and jalapeños that you want to pickle. Let them soak in the pickling liquid for at least 15 minutes then strain. (the long they are in the liquid the more sour they will get)

6. Pull the patties out and cook them on medium heat until they are crispy on all sides!

7. Toast your burger bun until golden in color. To assemble the burger, on the bottom bun spread the green goddess dressing then add the patty. Top with the pickled veggies and the top bun. I also like adding ketchup, chipotle mayo, lettuce too!!
