Palak Paneer

There is nothing better than a dish of creamy spinach, spices and paneer. Palak paneer puts all three together into a beautiful medley for your taste buds! This recipe was passed on to me from my brother-in-law and it has become an instant hit!

Recipe: Makes 4 servings

Ingredients:

16 oz container of Spinach

3 cloves Garlic finely diced

1/4 inch piece Ginger finely diced

3/4 Onion diced

5 Small/3 Large Tomatoes diced

5/8 Tsp Cilantro Powder

1/4 Tsp Turmeric

1 3/8 Tsp Salt

5/8 Tsp Red Chili Powder

1/3 Cup Milk/Cream

1/2 Tsp Garam Masala/Subji Masala

Method:

1. Boil a pot of water. Once the water has reached a boil put in spinach until it is blanched (the stem is a less firm).

2. Blend the spinach and leave it on the side for later.

3. In a pot, put in about a 1 Tbsp of oil. Once the oil is warm add in the onions, garlic and ginger. Cook until everything is translucent.

4. Add in the tomato, and cook until the majority of the water is cooked off.

5. Add in the cilantro powder, turmeric, salt and red chili powder. Cook until the spices are well mixed.

6. Then add in the spinach that you blended earlier into the pots with tomatoes. Cook everything together for a couple of minutes.

7. Add in the milk/cream and give it some time to mix in with the spinach mixture. Cooking for at least 5 minutes.

8. Add in the garam masala/subji masala and cook until the masala has mixed in completely. Add in the paneer and let it soak up all of the curry!

9. Taste and change according to taste.

Enjoy!
