Cilantro Turmeric Rice


This play on pulao is super flavorful with just half the ingredients. Thanks to the Instant Pot it is a one pot dish guaranteed to please everyone!


 

Recipe: makes 2 servings

Ingredients:

1 tsp Oil

1/2 tsp Cumin

1 1/2 Dry Red Mirch (Tadka Mirch)

1 Bay Leaf

2 Cloves

1/2 Cinnamon Stick

1/2 Onion thinly sliced

1/3 cup Cilantro

1/2 tsp Turmeric

1/8 tsp Red Chili Powder

2 tsp Salt

1 cup Rice- Washed/Rinsed a couple of times

1 1/4 cup Water


Method:

1. Using the sauté function on the instant pot warm up oil. (If you don't have an instant pot, do the tadka in a small pot on the side).

2. Add jeera to oil and mix until brown.

3. To the oil add the bay leaf, cloves, cinnamon, dry red mirch. Cook until everything turns slightly darker

4. Add the onion and cilantro and cook until the onions turn a little brown. Then add the turmeric and red Chili Powder.

5. Turn off the sauté function, then add the rice and water followed by the salt. Give everything a good mix. (If you don't have an instant pot add the tadka to the pressure cooker with the rice and water- water measurements will be different)

6. Close the lid and turn on the pressure cooker function to 6 minutes at high pressure. Once cooked let the pressure/steam naturally release.


Enjoy! We eat ours with yogurt but it would also taste great with aachar.
